Berry Nutty Overnight Oats

A few days ago, I was sitting in Biochemistry and some how the idea of eating oats raw came up. One of my friends in the class, a huge oatmeal lover to say the least, thought this idea sounded absolutely crazy.

Many mornings for breakfast, we eat raw oats, prepared correctly that is. No, I don’t just pour oatmeal in a bowl and eat it dry, instead I make “Overnight Oats” the night before. I tried to explain this to her, but I think she still thought I was nuts, so I decided a post on this would be a good idea. So Bri, from one oatmeal lover to another, here ya go, “Berry Nutty Overnight Oats…”

Ingredients:

1/2 c 1 minute (quick cooking) oats

1 cup vanilla unsweetened almond milk (I use skim milk in Dustin’s)

1/4 cup berries (blueberries, strawberries, blackberries, rasberries)

1/2 cut up banana

1 tbsp flax seed

1 tsp chia seed

1 tbsp chopped walnuts

1/2 packet Xylitol or 1 packet Stevia

Mix everything together in a bowl, cover, and refrigerate overnight. Add a dollop of Greek yogurt the next morning and breakfast is ready as you walk out the door!
