Super Easy Power Pancakes

This is literally the easiest recipe ever.  A quick, healthy, energizing breakfast. Oxygen Magazine always offers awesome breakfast/pancake recipes, including one like this!

Power Pancakes

2 c quick cooking oats

5 egg whites

2 tbsp ground flax seed

1 chia egg (explained below)

1/2 cup walnuts

1/2 cup berries for batter

1 cup plain Greek yogurt

3 scoops natural vanilla protein powder

1/2 c water

Combine all of your ingredients in a bowl.  Mix thoroughly. Pour batter onto griddle however big or small you want your pancakes.  And it’s that easy.

Top with more berries and banana.  You can even throw a little natural PB on them too if you want.  Drizzle 100% Pure Maple Syrup over the top and enjoy; please leave Aunt Jemima on the grocery store shelf.

Chia Egg (introduced to me via Tosca Reno, Oxygen Magazine.)

1 tbsp chia seed

4 tbsp warm water

Put chia into the warm water and let sit for 10 minutes.  Once the mixture has formed a gel add it to your batter.

On my journey through vegetarianism/veganism/pescatarianism, heck, I don’t know what you would call the journey I’m on, I’ve decided to introduce the chia seed into our diet.  I have long read about chia seeds, yet never bought my own, until now.

Apparently chia seeds have more Omega 3s than Atlantic Salmon, more antioxidants that fresh blueberries, more fiber than any bran cereal, more calcium than 2% milk, and more protein, fiber and calcium than the flax seed.  Who in the world wouldn’t try these seeds with all of these claims?!

Although I would never believe any claim written on the front of a cereal box, I will believe these claims about the chia seed because they have been around since the day’s of the Aztec warriors, literally.  These seeds were used by the Aztecs religiously to relieve joint pain, skin conditions, and to sustain energy.
