Dark Chocolate Peanut Butter Balls

Just because your choosing a clean life style doesn’t mean you can’t have an occasional treat.  Dark chocolate offers us so many more nutritional benefits so it’s definitely something to make the switch over to and learn to love!

Like I said, since Dustin and I got married he has always talked about these “Peanut Butter Balls that you need to learn how to make.”  So what a perfect time to test them out, for the Super Bowl! No matter who wins, chocolate is still chocolate, right?

And also Mom, these are gluten free (so long as you buy gluten free oats)!

Ingredients

3/4 c natural peanut butter

1/4 c agave/honey (your preference)

1 c brown rice crisp cereal

1/2 c oat flour (you can blend your own using instant oats and a food processor… if you want these to be cocoanut flavored used unsweetened shredded cocoanut here)

1/2 c peanut flour

1/2 dark chocolate (70% cocoa or more)

1/2 tbsp canola (or olive or cocoanut) oil

Directions:

Blend together all of your ingredients except for the chocolate and oil.  Pour the agave over the top and mix it thoroughly making a dough like consistency.


Form the dough into balls, whatever size you want.

That’s the start of our ball making…

Now, heat your chocolate in a double boiler… or if you don’t have one, like myself, you can make your own 🙂 Improvising at it’s finest.



Roll the balls in the chocolate.


He fits right in the the kitchen, doesn’t he? Maybe he should get a little more comfortable here!

Once you are finished, put them in the refrigerator and let them cool.  Once they are ready, or you are ready to serve them, obviously transfer them to a prettier serving dish and enjoy!
